I don't know about other people, but I find it really hard to find the mushrooms I need by gathering (ie) Red Flys and dark fungus. I would like to see these mushrooms as well as all the others sold in the shops or have a certain syntax to gather a specific type of mushroom. That would be most helpful.

Try different terrain types. There is a particular terrain type that will give you lots of those particular mushroom types. Also, with a higher % in the skill "knowledge of mushrooms", you can actually pick more mushrooms with one skill use. I'm not sure about uber high %'s, but at 68% (which is what my max was) it was extremely common to pick 3-5 mushrooms per skill use, while it was extremely uncommon to pick only 1 mushroom.
