Unfinished wood easily absorbs moisture from humid environments and releases it in dry weather. This cycling causes the wood the expand and contract which can strain the joints causing them to eventually work free. A basic finish slows this process as well as keeping dirt and grime from soiling the surface. Masters of finishing learn to work with various dyes to change the color of wood to perhaps disguise variations in the lumber used or even make it look like a more desirable species entirely.
